Milk Jam Roll-Up Cake
 

 

Ingredients for 1 cake roll:
 
Genoise :
 
125grs of flour
 
125grs of sugar
 
3 eggs
 
1/2 sachet of baking powder
 
 
 
Filling :
 
Sweetened condensed milk
 
 
 
Decoration (optional):
 
2 dark chocolate bars
 
Small sugar candies (here with cherry)
 
Colored sugar
 
 
 
Preparation:
A few hours before prepare the milk jam.
 
To do this, place a small can of sweetened condensed milk at the bottom of a casserole dish.
 
Cover with water and cook for 50 minutes on low heat.
 
Once the steam has escaped from the pan, empty the water and let the can of sweetened condensed milk cool before opening it or open it directly with an oven mitt and be careful of any milk jam splashes.
 
 
 
Prepare the sponge cake:
 
Separate the whites from the yolks.
 
In a dish, beat the whites until stiff.
 
At the same time, in a second dish, mix the egg yolks with the sugar until the mixture is frothy and will double in volume.
Incorporate 1/2 of the stiff egg whites into the yolk+sugar mixture and mix gently. Add 1/2 of the flour with yeast, mix gently then alternate the egg whites with the flour while mixing and lifting the mixture gently.
 
Pour the dough into the silicone tray and bake for 8 minutes at
180°C.
Turn out the sponge cake onto a clean cloth, roll it up and let it cool.
Unroll the sponge cake and garnish with milk jam.
 
Finally, decorate with melted chocolate, small candies and colored sugar according to taste or simply sprinkle with powdered sugar.
